Sunday Style

It's been a busy week and an even busier weekend! AND I've been fighting a cold through it all too. Yuck. I'm just glad now that it's finally coming to an end and the cold is pretty much gone. Hopefully next week will be nicer to me!

Pumpkin Pie Cupcakes


One of my favorite things about the fall season is pumpkin flavored EVERYTHING. Cliche, right? Yeah probably, but I've always loved pumpkin treats... muffins, pie, chai... Mmmm so good! 
Anyway, I found this recipe the other day and decided to give it a try. I looooove how they turned out! They're so delicious and super easy to make.. of course! These cupcakes have almost the same consistency as pumpkin pie, but a little firmer. Just don't be expecting a bready cupcake texture. 


Ingredients: 

15 oz can pumpkin puree
1/2 cup sugar
1/4 cup brown sugar
2 eggs
1 tsp vanilla extract
3/4 cup evaporated milk
2/3 cup all purpose flour
2 tsps pumpkin pie spice
1/4 tsp salt
1/4 tsp baking powder
1/4 tsp baking soda

Preparation:

1.) Preheat oven to 350 degrees.
2.) Line muffin tin with cupcake liners.
3.) Mix up the pumpkin puree, sugar, brown sugar, eggs, vanilla, and evaporated milk.
4.) Add flour, pumpkin spice, salt, baking powder, and baking soda.
5.) Fill each cupcake cup with 1/3 cup of the mixture.
6.) Bake for 20 minutes and let cool for 20 minutes.
7.) Removes cupcakes from the pan and chill in the fridge for 30 minutes.
8.) Top with whipped cream and sprinkle pumpkin pie spice for garnish.

*Tip:  I used ReddiWhip in a can to swirl on top of the cupcakes that we were about to eat and left the others bare until they're ready to be eaten. Whipped cream tends to melt pretty quickly so I didn't want to top them all at once.

Our First Anniversary, Part 2

In celebration of our first anniversary yesterday, I decided that we should put on our wedding outfits and take a few pictures. I mean, what else am I going to do with such an expensive gown that could only be worn once?? So, I've decided to do this every year! It will be fun to look back and see how we've changed over the years while still wearing the original clothes we officially started this journey in. It will also help motivate us even more to stay in shape! Haha :)



Yesterday was simply amazing.

Our First Anniversary!

Today, I get to celebrate a year of wedded bliss with the man of my dreams. I know, super mushy post here... but what can I say? I couldn't be any happier or more in love :)

We were so blessed to have such a perfect wedding with some of the most amazing people we know!

What Does the Fox Say?!

It's still super hot here in the 'sip, but the nights are getting cooler. Finally! At least it's not so miserable outside that I can't wear pants, because I looooove my new, blush colored pants. They're so soft and comfortable. I've also gotten myself addicted to Instagram shopping. I. Just. Can't. Stop.  ...but how cute is this handmade fox headband?!

Amazing Citrus Salad

This really is the best salad I've ever made so I just had to share it. The mixture of flavors is pure perfection! It's important to make sure you get a citrus vinaigrette for this salad and not just a regular or italian.. it just wouldn't be the same. You can also add grilled chicken for a little more substance. 
Delizioso!!



Ingredients:
Mixed greens
Citrus vinaigrette
Fetta cheese
Tangerines
Strawberries
Grapes
Apples 
Grilled chicken (optional)

Atlanta Anniversary Adventure - Part 2

My favorite part of our little trip was going to the aquarium and the zoo! The aquarium was so huge and had the prettiest little sea creatures. We even got to pet sting rays, sharks, and sea urchins!

Of course, the zoo was equally as fun. Normally, parakeets are pretty common in pet stores here, but this zoo had a giant open room filled with hundreds of parakeets! These little birds are way more fun to look at by the hundreds. We also watched an orangutan play games on a computer! It was really neat, but I was standing too far away to get a good picture.


Overall, it was a great way to spend our anniversary trip! What are your favorite zoo animals?

Atlanta Anniversary Adventure



This past weekend, Cody and I took an early anniversary trip to Atlanta and had the BEST time! We started the trip out by going to a Braves game..by the way, they totally won. Yay! Hah. I actually like watching baseball more than most other sports. I guess maybe it's just easier to understand for a girly-girl like me. 



We also did some exploring around the city! The neighborhood we stayed in was called Cabbagetown. It was an artsy neighborhood located in the heart of the city. A lot of the buildings in the area were covered in really awesome graffiti art. Sadly, I didn't have time to snap pictures of all of it. 

Our little townhouse sat right between an organic grocery store and several great restaurants... so it wasn't hard for us to decide where to go for lunch and dinner. Everything we tried was delicious!

And of course, we had to do a little antiquing during our exploration. We found one great place called Kudzu Antique Market. It was HUGE... and was full of independent seller booths with everything from fair trade products and crafts, to super old antiques and handmade furniture. Wish I could've bought it all up!


Aside from exploring and antiquing, we visited the zoo and the aquarium.. both of which were loads of fun! I'll be blogging about those adventures in my next post. :)
